how do you get enough coins?

I would suggest collecting the coins ;-).

There are no special tricks to collect enough coins just keep trying.

By the way as I tried this level the first time I had much more trouble to get to the goal, than to get enough coins

This is how I like unlocking the goal.
First get all of the yellow coins at the start.
And get as many red coins as possible,
and of course try to gain as much speed as you can at the hole that leads to the end of the level.
(If you did not get enough coins at the end get the red coins behind the ball.)
